Breakfast Totchos
Breakfast totchos are like nachos but on tater tots! It's a great brunch item and was honestly quite simple to put together.

Servings: 2 servings
- 2 servings frozen tater tots
- 1 cup refried beans
- 2 or 3 eggs
- 1/2 cup shredded cheese
- optional toppings: salsa, avocado, jalapenos, cilantro
Bake the tots according to the bag.
Warm the refried beans and cover the bottom of two plates with them.
Scramble or fry some eggs.
Top the beans with tots and then cover with cheese. I microwaved the plate for 20 seconds so the cheese would melt.
Add the eggs and whatever other toppings you want! I used salsa, avocado, pickled jalapenos, and cilantro from the garden.
