Breakfast Totchos
Breakfast totchos are like nachos but on tater tots! It’s a great brunch item and was honestly quite simple to put together. Totchos isn’t really a real word but it’s fun to say anyway. Make breakfast more interesting with some tex-mex flair.
Serves 2
Ingredients:
-2 servings frozen tater tots
-1 cup refried beans
-2 or 3 pasture raised eggs
-1/2 cup shredded cheese
-Optional toppings: salsa, avocado, jalapenos, cilantro
Instructions:
1. Bake the tots according to the bag.
2. Warm the refried beans and cover the bottom of two plates with them.
3. Scramble some eggs.
4. Top the beans with tots and then cover with cheese. I microwaved the plate for 20 seconds so the cheese would melt.
5. Add the eggs and whatever other toppings you want! I used salsa, avocado, pickled jalapenos, and cilantro from the garden.
