Chicken and Vegetable Fajitas

Chicken fajitas are one of my all time favorite weeknight dinners. It takes no time at all and can be healthy and filling. Flavors come together magically to taste just like your favorite Mexican restaurant fajitas, but from the comfort of home!

When you put the chicken in the cast iron with the vegetables they will release a lot of their juices. The best way to get that classic fajita flavor is to continue to cook it down until those juices evaporate.

Serves 2

Ingredients:
-2 chicken breasts, cubed⁣
-1 bell pepper, sliced⁣
-1 zucchini, chopped⁣
-1/2 onion if not low-fodmap⁣
-avocado or guac⁣amole
-salsa or tomatoes⁣
-cheese if desired (I always fry up some queso fresco slices!)⁣
-cilantro & lime wedges⁣
-corn tortillas, optional

For the marinade:⁣
-1/4 cup tamari or soy sauce or coconut aminos⁣
-1 tbsp chili powder⁣
-1 tbsp cumin powder⁣
-dash of cayenne if you want it spicy!

Instructions:
Marinate the chicken while you slice your veggies. Add the veggies to a hot cast iron with a little avocado oil. Once they cook down (about 5-6 minutes or so), add in the chicken with the marinade. Cook everything together until the chicken is cooked through and the liquid has cooked out. Serve with whatever you like to have with fajitas!

  • avocado or guacamole

  • cheese optional
  • cilantro optional
  • lime wedges

  • 1 tbsp cumin powder
  • dash of cayenne
